Kushari (Egyptian Rice, Lentils, and Macaroni)

Prep time: 20 minutes • Cook time: 30 minutes

Ingredients:

1½ cups uncooked white rice (prepare as directed)

1 cup uncooked lentils (prepare as directed)

1½ cups uncooked elbow macaroni (prepare as directed)

3 Tbsp. extra virgin olive oil

3 medium onions (2 onions sliced,

1 onion medium dice)

3 cloves garlic (minced)

2-14 oz. cans diced tomatoes

1 tsp. cumin

¾ tsp. coriander

¾ tsp. cinnamon

½ tsp. nutmeg

¼ tsp. crushed red pepper (or more to taste)

Salt and pepper to taste

4 Tbsp. fresh mint (chiffonade)

1½ tsp. lemon juice

1½ cups plain yogurt

1-14 oz. can garbanzo beans (optional; washed and drained)

Directions:

Prepare all of the ingredients as specified in the ingredients list. Prepare the rice and set aside. Prepare the lentils and pasta (separately) following package directions. Drain the pasta and the lentils when fully cooked.

In a medium saucepan, add the olive oil and the sliced onions; the slices should be separated into rings. Cook over medium high heat until the onions are crunchy. Place the cooked onions on a paper towel. Using the same pan to cook the onions, add the diced onions to the pan. Sauté the onions for 1-2 minutes, and then add the garlic and sauté for 1 minute. Add the diced tomatoes, cumin, coriander, cinnamon, nutmeg, and crushed red pepper, and salt and pepper

to taste. Bring the tomato sauce to a boil, and then reduce heat and simmer for 15 minutes.

In a small bowl, mix yogurt, 2 Tbsp. mint, and lemon juice well. To serve, layer ingredients on a large platter or in individual bowls in the following order: rice, pasta, lentils, tomato sauce, garbanzo beans (if using), and cooked onions. Garnish with remaining mint and serve with the yogurt sauce on the side.

Remmi Notes: In my research, I learned that this dish is a popular street food and is served in every home and restaurant. When I saw the combination of pasta, lentils, and macaroni, I just had to go for it! There are hundreds of kushari recipes using different spice combinations. While I included the garbanzo beans just as an optional garnish (since they’re not one of my favorites), in Egypt, they are usually used in this dish. I am an enthusiast of yogurt, and I never, ever eat a rice dish without either a side of plain yogurt or a yogurt sauce. You should try it with kushari, because it adds great flavor to this spicy dish! Often this dish is served with all of the ingredients just mixed together, but it presents beautifully when plated in layers as suggested.
